Cockles are a tiny clam with a wonderfully sweet taste.  They are great in pasta dishes like linguine just as much as your traditional Linguine & Clams.  If using cockles, you want to use the white clam sauce recipe for sure, as the flavor will get lost with red sauce with tomatoes.  In a sauce pan you simply heat some olive oil, a dab of butter, garlic, salt, pepper and a splash of white wine.  Add your cockles, and once they pop open, they are done, which should be within a matter of a few minutes. The salt water and juices they retain will become part of the sauce and once joined with your cooked linguine you have a delicious, dish which all you need to do is top with chopped parsley if you wish, or even a dash of hot red pepper flakes.
